Chocolate Mocha Sugar Cookies

Today I decided to try to use up some of the ingredients I had sitting in my cupboard. So, I picked these cookies. Now, we were out of eggs, so since I only needed one, I used a substitute I found online. It worked fine…the cookie dough was a little crumbly, but maybe that’s just the nature of the cookies. They turned out delicious! I ended up making a sort of glaze for the top of them out of peanut butter, maple syrup, and honey. Then I decorated them with sweet little snowflake sprinkles from Williams-Somoma. See below for the recipe and some photos!

Chocolate Mocha Sugar Cookies

Makes 2-3 dozen

Dust these cookies with equal parts powdered sugar and sweetened cocoa powder, if you like.

Nutrition:
Per serving (1 cookie/17g-wt.): 70 calories (25 from fat), 3g total fat, 1.5g saturated fat, 15mg cholesterol, 25mg sodium, 10g total carbohydrate (0g dietary fiber, 5g sugar), 1g protein

Ingredients:
1/2 cup (1 stick) unsalted butter
3/4 cup packed light brown sugar
1 teaspoon vanilla extract
1 egg
2 cups flour, plus more for rolling out cookies
1 tablespoon instant coffee
2 tablespoons unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt

Directions:
In a large bowl with an electric mixer at medium speed, beat butter, sugar and vanilla together until light and fluffy. Beat in egg until well blended. In a separate bowl combine flour, instant coffee, cocoa powder, baking powder and salt. With mixer at low speed, beat flour mixture into butter mixture to blend well. Divide dough in half and shape into two discs. Wrap in waxed paper and chill until firm, at least 1 hour or overnight.

Preheat oven to 350°F. Dust work surface and rolling pin lightly with flour. Working with one disc of dough at a time, roll out dough to 1/4-inch thick and cut out cookies with floured cookie cutters. Transfer cookies to parchment paper-lined baking sheets, spacing them 1 inch apart, and bake until lightly browned, 10 to 12 minutes. Transfer cookies to a wire rack to cool. Decorate as desired and store in an airtight container.

#wildercobalt 🎄 We got our Christmas tree tonight with this adorable, grumpy (?sometimes?) toddler. In typical 2-going-on-3 fashion, he went from “I DON’T WANT TO GET A TREE” to “ONLY ME AND DADDY GET A TREE” (which was so odd for him) to “YAY CHRISTMAS! JINGLE BELLS! CHRISTMAS TREES!” And went between the first and last of those about 20x, before finally landing on happiness. 🙄 We also did our first ever advent reading as a family, which was really special. Even with the rollercoaster 🎢 of emotions a toddler brings to the table (for all of us), I wouldn’t change a thing! #wildercobalt #3rdchristmas #christmastraditions Travel day with this buddy.
